“I grew up in a small town in Maharashtra where exposure to higher education was limited. However, owing to the determination of my father to give his children a proper education, I did most of my schooling outside the town. I wanted to study medicine initially, but could not get a seat for the same. On the other hand, my father had foreseen a lot of career opportunities in the food processing industry back then, and he motivated me to pursue my B.Tech and M.Tech in this field.

I never thought I would do a PhD because working on the same thing every day seemed quite mundane to me. So, I took the first chance I got via campus placement and started working at General Mills. I even got married after M.Tech and currently have a ten year old son.

After a few years, however, I realized that there was a lot of gap in my understanding and felt that a research exposure would be beneficial for my career growth.

So, I left my job and enrolled for a PhD in ICT. I. worked on the processing and storage stability of bioactive compounds in fortified food products and considering the high prevalence of deficiency of vitamins B12 and D3 around the world, my work was majorly focused on these two vitamins.
